Theoretical considerations of both open channel and two-phase flows are used to describe stable flow behavior in a milk pipeline. An optimal range of fill depth ratio is suggested for maintaining stable flow, while minimizing effective shear stress on milk. Experimental data are presented that verify the accuracy of an open channel prediction of both stable flow behavior and the onset of flow instabilities.
