Abstract:
Tannins isolated from ripe carob pods were subjected to thioglycolic acid degradation and mild and strong acid hydrolysis. Mild acid hydrolysis did not degrade the tannins, strong acid hydrolysis resulted in the production of delphinidin, cyanidin and pelargonidin. The ethyl acetate-soluble thioglycolic acid degradation products were identified by paper chromatography, UV and IR spectral analysis as (-) epigallocatechin, (-) epigallocatechin gallate and (-) epicatechin gallate. The minimum molecular weight of the polymers, 3200, was estimated on Sephadex columns. It is concluded that the polymeric condensed tannins from ripe carobs consist of subunits of flavan-3-ols and their gallate esters. © 1971.
