Abstract:

This review summarizes more than 10 years of research and development in the 
area of combined modified atmosphere and modified humidity packaging of fresh produce 
performed in Israel by collaborative efforts of academic and industrial research teams. In 
many cases, the commercialization of modified atmosphere packaging (MAP) is limited due 
to the accumulation of condensed water in the package causing increased pathological and 
physiological disorders. In a joint venture between the Agricultural Research Organization–
The Volcani Center and StePac LA we have developed a series of plastic films having a 
higher permeability to water vapor than most commercially available MAP products.

This review summarizes more than 10 years of research and development in the
