Abstract:
Summary. A previously unknown process has been found to occur in the peel of Shamouti orange at the end of the season, which may be responsible for the disappearance of the limonic acid A‐ring lactone, the non‐bitter precursor of limonin. the nature of this process is not yet established, but there are indications that it is of an enzymic nature.
