Abstract:
1. 1. The two major urinary metabolites of rats ingesting carobs (Ceratonia siliqua) and carob fractions were chromatographically identified as gallic acid and 4-O-methylgallic acid. 2. 2. These metabolites probably originate from free gallic acid in green carob pods, or from the ester-linked gallates in the tannin fraction. 3. 3. The catechin moiety of condensed carob tannins does not undergo metabolism in the rat. © 1972.
